They are so easy to make; perfect for bread-making beginners and experts alike!

If you want one of the easiest, foolproof and delicious buns recipes around, this is it.

I got this recipe from Säde. Quark adds acidity and lightness. And meringue from egg whites complements with texture and crispy top.

Notice, I did not use sugar. I used this time sweet quark. If you are going to use regular quark add some sugar in.

A fresh, light, Estonian-inspired Quark Buns.

Sade Cake (3)

Ingredients

  • 300 g flour
  • 150 g butter
  • 1 egg
  • 100 g sweet quark or add some sugar

Directions

  1. Sift the flour into a large bowl, add the cold butter and quark and rub in with your fingertips until the mixture resembles fine breadcrumbs. Add egg yolk and mix to a firm dough. Knead the dough briefly and gently on a floured surface. Use baking paper and  Roll out the dough and chill for 1 hour
  2. 2.  Beat sugar and egg white together into a light foam.
  3. Pour egg whites into a cake and Spread over the bottom, Take the longest edge of the cake and using the baking paper underneath, roll up the cake quite tightly, making sure the filling stays inside.
  4. Cut roll into slices and place on a baking paper covered baking tray.
  5. bake at 165-170 C /low temperature)  for 15-20 minutes

Of course, I assume, that you use prepared mushroom ( as I do).

Fresh chanterelle: The mushrooms are cleaned without water, with only a clean, dry towel and paring knife. Heat the chanterelle in a skillet without fat/butter until water has evaporated.

Frozen mushroom: melt, fry slightly.

Ingredients

  • 1 (red)onion
  • 2 clove garlic
  • small leek
  • 3 tablespoon butter
  • 200 g mushrooms
  • two palms of cauliflower
  • 100 g lentils
  • 4 tablespoon white vine
  • (salt), pepper and thyme

Directions

  1. Chop onion, leek and garlic. Turn in cattle.
  2. Melt butter, add vegetables and mushroom. Simmer at a low heat few minutes and add the wine and let reduce
  3. 3.  Add lentils and cauliflower florets.  Add enough boiling water to cover all ingredients. Simmer at a low heat ac 10  minutes. Check time to time about water. But keep the water level as low as possible.
  4. Blend soup using a blender

You can bake it as simple version  or add lot of different ingredients and additives and get every day new cake.
Why not to add some berries. Or nuts. Or during wintertime little bit candied fruit and ginger and cinnamon. …
This cake would like to have the accompany a sauce or jelly or kissell.

Or just some fresh strawberries 🙂

Sour Milk Cake

  • Servings: 20 cm

A simple and delicious cake


Ingredients

  • 1 cup  of semolina
  • 125 ml sour milk (or kefir or buttermilk or yoghurt )
  • 1 egg
  • 100 g sugar
  • 50 g butter
  • lemon juice and zest
  • 40 g raisins or other dried/fresh fruits. I used dried apples
  • salt
  • 0,5 teaspoon baking powder
  • 2 tablespoon flour
  • for greasing pan some butter and bread crumbs

Directions

  1. Mix together the semolina and sour milk and leave to swell for 30-40 minutes
  2. Melt the butter. Prepare raisins or other fruits
  3. beat egg and sugar together, add semolina mixture and soft butter and fruits. Mix together  flour and baking powder  and add the ingredients to the mixture gradually while stirring
  4. Season with lemon juice and grated zest.
  5. Pour into greased and bread crumbs covered pan.
  6. Bake at 175 C convection (medium heat) for 40-45 minutes.

The National Planning Committee of the USSR almost doubled the cheese production of the Estonian SSR for the five-year plan, So, this is the reason why Estonia began to produce cottage cheese which was reported as cheese in the reports 🙂

  • 100 g melted butter
  • 300 g cottage cheese
  • 4 tablespoon sour cream
  • 3 eggs
  • 1 dl flour
  • 200 g grated cheese
  • 100 g sliced bacon or ham
  • salt, pepper

Directions

  1. melt butter and mix in all ingredients and most of the cheese.
  2. Pour mixture into baking pan or casserole. And sprinkle with remaining cheese
  3. bake at 200 C for 30-40 minutes

Ingredients

  • 2 potatoes
  • 4 cloves garlic
  • 0,5 dl oil
  • 1,5 dl milk
  • 2 eggs
  • 2,5 dl flour
  • 2 teaspoon baking powder
  • salt, pepper, nutmeg

Directions

  1. Boil peeled potatoes in water until soft. When potatoes are tender remove pot from the heat and strain. NB! leave 0,5 dl potato boiling water for later
  2. Put oil into the pan add peeled garlic. Fry slightly. Do not brown!!
  3. Mash potatoes, add garlic oil. Add warm milk, boiling water and eggs.
  4. Add flour, baking powder and season.
  5. Bake waffles

  • Servings: 3-4

This is classical baked macaroni and cheese recipe with twist.

Ingredients

  • 200 g (uncooked) barley groats
  • 400 ml milk
  • 4 tablespoon butter
  • 4 tablespoon flour
  • 150 g grated cheese (strong taste)
  • salt, pepper, mustard and thyme

Directions

  1. Prepare and cook barley. Preheat oven to 200 C  degrees.
  2. Melt the butter in a skillet or pot large enough to hold the barley when it’s done.
  3. Add the flour and stir over medium heat until the mixture is lightly browned; 1-2 minutes.
  4. Add the gradual milk and whisk to remove any lumps and add the salt and pepper.
  5. Cook over medium-high heat until the sauce thickens and starts to bubble. About 6 minutes.
  6. Stir in the cheese and whisk until smooth and melted. Turn off the heat. Season with mustard and thyme
  7. add groats to the sauce.
  8. Stir the groats into the sauce and bake in a greased dish ( ca 20 cm )  (sprinkle with bread crumbs)20-25 minutes until browned and bubbly.
